Sweet Bread Recipes
Pecan Pie Muffins
1 cup chopped pecans
1 cup firmly packed brown sugar
1/2 cup all-purpose flour
2 large eggs
1/2 cup butter or margarine, melted
Heat oven to 350 degrees F. Line 9 muffin pans with paper or foil muffin cups
and spray foil (if using) with vegetable oil.
In a mixing bowl, combine pecans, brown sugar and flour.
In a separate, bowl beat eggs until foamy; stir in butter. Pour egg-butter
mixture over dry mixture and stir until just moistened. Fill muffin cups 2/3
full with batter. Bake 20 to 25 minutes. Cool on wire racks.
Per serving: 281 calories (percent of calories from fat, 63), 3 grams
protein, 24 grams carbohydrates, 1 gram fiber, 20 grams fat (7 grams saturated),
75 milligrams cholesterol, 125 milligrams sodium
