Real McCoy Pound Cake

1 pound butter, softened
3 1/2 cups sugar
8 eggs, separated
1 teaspoon lemon extract
4 1/2 cups sifted all-purpose flour,
    measured after sifting

Heat oven to 325 degrees F.

In large mixer bowl, beat butter and sugar until light and fluffy. Add egg yolks one at a time, beating well after each addition. Add lemon extract. Gradually add flour, beating well after each addition.

Beat egg whites until stiff, then fold into flour mixture. Pour batter into well-greased tube pan, and bake for 90 minutes or until cake tests done.
