Cupcake Recipes
Spicy Pumpkin Cupcakes
1 (16 ounce) can solid-pack pumpkin
3 eggs
1/3 cup vegetable oil
1/3 cup water
1 (18.25 ounce) box spice cake mix
Heat oven to 350 degrees F. Line 24 muffin cups with paper liners.
In large mixing bowl, beat pumpkin, eggs, oil and water until well blended. Add
cake mix, and blend 2 more minutes. Fill muffin cups 3/4 cull.
Bake about 18 minutes, or until a wooden pick inserted in center comes out
clean.
NOTE: May be iced with cream cheese frosting, if desired.
