Fish & Seafood Recipes
Salmon Dijon
4 (6 ounce) salmon fillets
2 1/2 tablespoons Dijon mustard
1/4 cup dry Italian bread crumbs
1/4 cup butter, melted
1/2 teaspoon lemon pepper
Heat oven to 400 degrees F.
Wash salmon fillets and pat dry.
Line a jellyroll pan with aluminum foil. Place fillets on foil, skin side down.
Spread top and sides of each fillet with about 2 teaspoons mustard. Top mustard
with a layer of bread crumbs, and sprinkle with lemon pepper. Add salt to taste.
Drizzle butter over top. Bake about 15 minutes or until fish flake easily when
tested with a fork.
Serves 4.
