Trout Florentine

2 (12 ounce) packages Stouffer's spinach souffle
4 trout, filleted
Water
1/2 cup white wine
1 cup hollandaise sauce

Cook spinach souffle according to package directions. When souffle is within 15 to 20 minutes of being done, place trout in a shallow pan. Surround fish with water, but do not cover; add wine. Poach fish until meat is opaque. Spoon souffle into a 2-quart rectangular glass dish. Place trout on top of souffle, and pour hollandaise sauce over all. Serve immediately.

Makes 4 to 6 servings.
