Mexican Recipes
Flour Tortillas
Makes about 12.
4 cups flour
2 teaspoons salt
2 teaspoons baking powder
4 tablespoons shortening
1 1/2 cups warm water
Vegetable oil
Combine dry ingredients in a large mixing bowl. Cut in shortening with a pastry
cutter. Add water until the dough forms a ball. Place dough on a lightly floured
surface. Knead 15 to 20 times. Let rest 10 minutes.
Form dough into 12 balls. Roll each ball on flour-covered board until the
thickness of a store-bought flour tortilla.
Lay each tortilla on a flat preheated cast iron skillet, and cook for about 2-3
minutes per side - until lightly browned on each side.
