Casserole Recipes J-Z
Barbecue-Topped Potatoes
4 large baking potatoes
1 (18 ounce) container barbecue pulled beef
1 stick (1/2 cup) butter or margarine, divided
1 cup shredded cheddar cheese
1/3 cup chopped green onions
Bake potatoes in oven at 400 degrees F for 1 hour until soft when pressed.
Meanwhile, heat barbecue meat over low heat.
Cut baked potatoes in half lengthwise, and add 1/8 stick butter to each half,
fluffing pulp and butter with a spoon to mix. Put each half on a serving plate
and pile warm barbecue meat on top, adding a generous sprinkling of cheese and
some green onions to each/
Serves 8 normal appetites or 4 hungry appetites.
