Meat Ball Quesadillas
1/2 cup chopped onion
2 tablespoons extra virgin olive oil, divided
4 large flour tortillas
1 package frozen precooked meat balls (any flavor),
thawed and sliced
1 (8 ounce) bag shredded Mexican four cheeses
Saute onion in a tablespoon of olive oil to soften. Drain and set aside.
Heat oven to 375 degrees F. Spread a teaspoon of olive oil on one side of flour
tortilla. Place tortilla, oiled side down on cookie sheet. Layer sliced
meatballs, onions and cheese on top. Top with a second tortilla; press together
slightly and brush top with olive oil. Repeat process with remaining
ingredients. Bake 10-15 minutes or until tortillas are brown and crisp. Cut into
wedges to serve.
