Apricot-Onion Chicken

1 cup apricot preserves
1 (8 oz) bottle Catalina salad dressing*
1 (1 oz) pkg onion soup mix
6 to 8 chicken breast halves

Combine apricot preserves, dressing and soup mix. Place chicken breasts in a large, buttered baking dish and pour apricot mixture over chicken. Bake uncovered at 325 degrees for 1 hour and 20 minutes. Serve over hot rice.

* For a change of pace, use Russian dressing instead of Catalina.
