Pork Recipes A-E
Just Peachy Pork Chops
4 (4 ounce) thick boneless center-cut pork chops
1/2 teaspoon salt
1/2 cup peach preserves
2 tablespoons Dijon mustard
1 tablespoon water
Sprinkle chops with salt. Spray a 10-inch skillet with nonstick cooking spray.
Over medium-high heat, cook pork chops for 2 minutes on each side. Reduce heat
to medium; cook 5 minutes longer on each side.
Combine peach preserves, mustard and water; stir well. Pour sauce over chops;
cook until heated through, 2 to 3 minutes.
Serve sauce over chops. Sprinkle with pepper, if desired.
