Pork Recipes M-R
Pork Chops in Gravy
4 (1/2-inch thick) boneless pork chops
1/2 cup all-purpose flour, divided
1/2 cup oil
1/2 cup evaporated milk
1/2 cup water
Coat pork chops with 1/4 cup flour.
Heat oil in large cast iron skillet over medium-high heat. Fry pork chops in hot
oil on both sides until golden brown, about 10 minutes; season with salt and
pepper to taste while frying. Remove chops and set aside, reserving drippings.
Combine evaporated milk and water; set aside.
Heat pan drippings over medium-high heat until hot, then add remaining 1/4 cup
flour; cook, stirring constantly, about 1 minute. Add milk-water mixture, and
stir quickly to blend. Bring to a boil, and boil for 1 minute. Lower heat and
simmer about 5 minutes.
Season with salt and pepper to taste. Add pork chops to gravy, and simmer over
medium-low heat until very tender, about 30 minutes.
