Sweet Applesauce Glazed Pork Roast
1 (4 to 6 pound) pork loin roast
1/3 cup applesauce
1/4 cup molasses
1/4 teaspoon ground ginger
1 clove garlic, minced
Place roast on rack, fat side up, in roasting pan. Insert meat thermometer into
thickest part of roast, making sure not to touch bone. Bake at 325 degrees F for
about 2 hours, or until meat thermometer registers 170 degrees F.
Combine applesauce, molasses, ginger and garlic in saucepan over medium heat.
Baste with applesauce mixture every 10 minutes during last 30 minutes of
cooking.
Serve pork with remaining applesauce mixture.
Serves 8.
