Pasta Recipes D-L
Garlicky Orzo
2 tablespoons extra virgin olive oil
3 cloves garlic, minced
1/2 small onion, finely chopped
2 (14 ounce) cans chicken broth
2 cups uncooked orzo pasta
Place a saucepan over medium heat. When hot, pour in olive oil. Add garlic and
onion; cook and stir about 3 minutes until tender. Pour in chicken broth, and
stir and scrape the bottom of pan.
When broth boils, stir in orzo. Reduce heat to low, cover and simmer 15 minutes,
or until pasta has absorbed all liquid. Stir occasionally to prevent sticking.
Season with salt and pepper before serving.
