Macaroni and Cheese

1 can evaporated milk, divided
1 small onion, chopped
3 cups uncooked macaroni
1 can mushroom soup
3 cups shredded cheese

Set aside 1/2 cup of the evaporated milk. In a large pot, to the rest of the milk, add enough water to make 4 1/2 cups liquid. Add onion; bring to boil. Add pasta and simmer, UNCOVERED, over medium heat until pasta is done (DO NOT DRAIN).

Add soup, cheese and reserved milk. Cook and stir over low heat until cheese is melted. Add salt and pepper to taste.
