Pasta Recipes D-L
Molasses-Baked Lima Beans
Makes 6 to 8 servings.
1 pound dried lima beans
4 cups water
2 cups ketchup
1 cup molasses
1 cup dark brown sugar
1 pound bacon
Soak lima beans in the 4 cups water overnight in a large stock pot.
In the morning, do not drain, but cook, covered, for 45 minutes in soaking water.
Meanwhile, saute bacon in a large skillet until crispy. Drain off drippings. Break cooked bacon into small pieces.
Add all ingredients to beans in stock pot, mixing well.
Pour into a 3 1/2- to 4-quart baking dish. Cover.
Bake for 20 to 25 minutes at 350 degrees F or until hot and bubbly throughout.
