Pie Recipes P-Z
Rhubarb Pie
1 cup sugar
3 tablespoons flour
2 egg yolks, beaten
3 cups diced rhubarb
1 (9-inch) unbaked pie crust
In a mixing bowl, stir together sugar, flour and egg yolks until crumbly. Set
aside 3/4 cup of the mixture for topping.
Stir rhubarb into remaining crumbs. Spoon rhubarb mixture into pie shell.
Sprinkle reserved crumbs on top of pie filling.
Bake at 400 degrees F for 25 minutes.
Reduce oven temperature to 350 degrees F, and bake an additional 20 minutes, or
until rhubarb filling is bubbly.
Allow to cool before serving.
