Southwestern Recipes
Rice And Chile Pepper Casserole
1 cup rice, cooked
1/2 pound Monterey jack
cheese
1 cup sour cream
1 (4 ounce) can diced green
chile peppers
Paprika
Cook rice and allow to cool.
Spray a 2-quart casserole.
Put in one layer each of
rice, peppers, sliced or grated cheese and sour cream. Make two layers,
then sprinkle with paprika. Heat in 350 degree F
oven until the sour cream bubbles, about 30 minutes.
Serves 4-6.
