Side Dish Recipes D-L
Eggplant and Tomato Parmesan
1 medium eggplant, peeled and cut crosswise
into 1/2-inch slices
2 tablespoons lemon juice
1/4 cup vegetable oil
1 large tomato or two medium tomatoes, sliced
1/2 cup freshly grated Parmesan cheese
Heat oven to 350 degrees F.
Brush each slice of eggplant on both sides with lemon juice to prevent it from
turning brown. Place slices on baking sheet. Brush with oil, and bake 5 to 8
minutes. Turn slices and repeat the process. Top eggplant with a slice of
tomato, and sprinkle generously with cheese. Broil until cheese is bubbly.
