Mexican Black-Eyed Peas
1 (14 ounce) can black-eyed peas
1 (14 ounce) can Mexican flavored stewed tomatoes
Drain black-eyed peas. Put into a saucepan. Drain the tomato juice from the stewed
tomatoes into the saucepan, then dice the tomatoes. Add tomatoes to the saucepan.
Mix together. Simmer over medium-low heat for 25-30 minutes.
Good eaten plain, but great served over rice with cornbread and a salad on the side.
Serves 4.
