Soup, Stew & Chili Recipes E-L
Garlic Soup
2 tablespoons olive oil
6 cloves garlic, crushed
3 slices French bread, crusts removed
4 cups chicken broth
Salt and pepper, to taste
Sauté garlic cloves and bread in oil over medium heat until they are just
browned (do not let them burn). Remove from heat. Remove the bread, cut into
1-inch squares, and return the cubes to the pan. Add chicken broth, bring to a
boil, cover, and simmer for 20 minutes, or until the bread has disintegrated and
mixed well into the broth. Add salt and pepper to taste.
