Hash Brown Soup

Makes 6 to 8 servings.

1/2 pound bacon, diced
1 large onion, chopped
1 (48 ounce) container chicken broth
2 pounds frozen hash browns
1 pound Velveeta cheese, cubed

Place bacon and onion in a 6-quart stockpot. Cook until tender.

Add chicken broth and frozen hash browns. Heat through.

Add Velveeta cheese, stirring until cheese melts, but do not boil.
