Soup, Stew & Chili Recipes M-R
Pueblo Hamburger Stew
2 pounds lean ground beef
1 large onion, chopped
5 medium potatoes, peeled and sliced thin
5 roasted green chiles (to taste), peeled,
seeded and chopped fine
2 tablespoons cooking oil
Put oil in skillet; when warm, add onion and fry until onion becomes soft. Add
meat, stirring with fork to break it up. Fry slowly until meat loses red color.
Pour off fat. Add potatoes and chiles. Stir together and add just enough water
to prevent sticking to pan.
Optional: Add chopped tomatoes, corn kernels, peas, etc. Cover and simmer slowly
until potatoes are done, about 30 minutes. Add salt to taste.
