Instructions
Preparation Steps
Preheat the oven to 325°F (163°C).
Mix graham cracker crumbs with 0.5 cup sugar and press evenly into the bottom of a 9-inch springform pan.
Bake the crust for 10 minutes, then remove from oven to cool.
In a large bowl, beat the cream cheese until smooth. Add eggs one at a time, then fold in lemon zest.
Gently fold in the fresh blueberries into the cream cheese mixture.
Pour filling over the crust and bake for 35 minutes or until the center is almost set.
Cool cheesecake completely at room temperature, then refrigerate for at least 4 hours before serving.
Notes
For best results, use fresh blueberries and chill cheesecake overnight.
