Instructions
Preparation Steps
Preheat your oven to 400°F (200°C).
In a bowl, toss the diced butternut squash with olive oil, thyme, salt, and pepper.
Spread the squash on a baking sheet and roast for 25 minutes until tender.
Roll out the pie crust on a parchment-lined baking sheet.
Once the squash is roasted, let it cool for a few minutes, then combine it with the goat cheese.
Spoon the mixture onto the center of the pie crust, leaving a border around the edge.
Fold the edges of the crust over the filling and brush with the beaten egg.
Bake for 20 minutes or until the crust is golden brown.
Drizzle with honey if desired before serving.
Notes
For extra flavor, add some sautéed onions or a sprinkle of chili flakes.
