Instructions
Preparation Steps
Heat olive oil in a large pot over medium heat.
Add chicken thighs and brown on all sides, about 5 minutes per side.
Remove chicken and set aside. Sauté garlic, carrots, celery, and potatoes in the same pot until slightly softened, about 5 minutes.
Return chicken to the pot. Pour in chicken broth and add thyme, salt, and pepper.
Bring to a boil, then reduce heat to low and simmer uncovered for 60 minutes until chicken is tender and stew thickens.
Adjust seasoning if needed and serve hot.
Notes
Best served with crusty bread and a fresh green salad.
