Preparation Steps
In a large bowl, combine warm water, yeast, and 1 tablespoon of sugar. Let it sit for about 5 minutes.
Add flour, melted butter, and remaining sugar to the yeast mixture. Stir until a dough forms.
Knead the dough on a floured surface for about 8 minutes until smooth.
Place the dough in a greased bowl, cover it, and let it rise for 30 minutes or until doubled in size.
Preheat the oven to 425°F (220°C) and line baking sheets with parchment paper.
Prepare the baking soda solution by dissolving it in a large pot of boiling water.
Once the dough has risen, roll it into long ropes. Cut into 10-inch pieces.
Dip each pretzel stick into the baking soda solution for about 30 seconds, then place on prepared sheets.
Sprinkle with coarse salt and bake for 12-15 minutes or until golden brown.
In a small bowl, mix cinnamon and remaining sugar. Brush the baked pretzels with melted butter and coat in the mixture.
Serve warm with your favorite dip or glaze.
Notes
For extra flavor, add a pinch of nutmeg or serve with chocolate dipping sauce!
