Instructions
Preparation Steps
Bring the vegetable broth to a boil in a medium saucepan.
Once boiling, add the couscous, stir, and cover. Remove from heat and let it stand for about 5 minutes.
Fluff the couscous with a fork and let it cool slightly.
In a large bowl, combine tomatoes, cucumber, red onion, parsley, and feta cheese.
Add the cooled couscous to the vegetable mixture.
In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
Pour the dressing over the couscous salad and toss well to coat.
Serve chilled or at room temperature and enjoy!
Notes
For added texture, consider including some toasted nuts or dried fruits. This salad keeps well in the fridge for a few days.
