Instructions
Preparation Steps
In a medium pot, combine the rinsed rice, coconut milk, and water. Stir in the salt.
Bring to a boil over medium heat. Once boiling, reduce to low and cover.
Simmer for 20 minutes until rice is tender and liquid is absorbed. Remove from heat.
Stir in lime juice and lime zest until well combined.
Fluff the rice with a fork, and fold in chopped peanuts before serving.
Notes
For added flavor, consider garnishing with fresh herbs like cilantro or mint!
