Instructions
Preparation Steps
Preheat your oven to 375°F (190°C).
In a large bowl, mix the shredded chicken, cooked rice, black beans, corn, bell pepper, and taco seasoning until well combined.
Stir in half of the pepper jack cheese and the sour cream into the mixture.
Transfer the mixture to a greased baking dish and spread evenly.
Top the dish with the remaining pepper jack cheese.
Bake in the preheated oven for 30-35 minutes, or until the cheese is bubbly and golden.
Notes
This dish pairs well with a side salad. For an extra kick, add sliced jalapeños before baking!
