Instructions
Preparation Steps
Heat the olive oil in a large pot over medium heat. Sauté the chopped onion until soft.
Add the minced garlic and curry powder; cook for 1 minute until fragrant.
Stir in the tomato paste, followed by the rinsed lentils and vegetable broth. Bring to a boil.
Reduce heat and let it simmer for about 15 minutes, or until lentils are tender.
Mix in coconut milk and add the chopped spinach. Cook for an additional 3-5 minutes.
Notes
Add a squeeze of lime juice before serving for a fresh burst of flavor.
