Instructions
Preparation Steps
In a bowl, mix the cheese, black beans, diced tomatoes, cumin, and chili powder until combined.
Take an egg roll wrapper, place a spoonful of the mixture in the center, and fold according to package instructions.
Heat olive oil in a frying pan over medium heat. Fry the egg rolls until golden brown, about 3-4 minutes per side.
Remove from oil and drain on paper towels. Serve hot, garnished with green onions.
Notes
For extra crunch, serve with a side of salsa or guacamole. Experiment with different ingredients like jalapeƱos for spice!
