Instructions
Preparation Steps
Heat olive oil in a large skillet over medium-high heat. Season chicken thighs with salt and pepper, then brown them on both sides until golden, about 5 minutes per side. Remove and set aside.
Lower heat to medium. Add garlic and mushrooms to the pan and sauté until soft, about 5 minutes.
Pour in the white wine and cook for 2 minutes to reduce slightly.
Add chicken broth, diced tomatoes, thyme, and rosemary. Stir well.
Return chicken to the skillet, cover, and simmer on low for 35 minutes until chicken is cooked through and sauce is flavorful.
Serve hot with crusty bread or over rice.
