Preparation Steps
Preheat oven to 375°F (190°C).
Butterfly the pork loin by slicing it lengthwise without cutting all the way through, then open it like a book.
Spread the shredded mozzarella and chopped basil evenly over the opened pork.
Roll the pork loin tightly and secure with kitchen twine.
Rub the outside of the roll with olive oil, salt, and pepper.
Place the pork loin on a roasting pan and bake for 90 minutes or until internal temperature reaches 145°F (63°C).
Remove from oven, cover with foil, and let rest for 10 minutes before slicing.
Notes
Serve with roasted vegetables or a fresh green salad for a complete meal.
