Instructions
Preparation Steps
Preheat the oven to 375°F (190°C).
Slice chicken breasts in half horizontally to create thinner cutlets.
In one bowl, beat the eggs; in another, mix bread crumbs and Parmesan cheese.
Dip chicken cutlets first into eggs, then coat thoroughly with bread crumb mixture.
Heat olive oil in a skillet over medium heat and cook chicken until golden brown on both sides, about 3-4 minutes per side.
Place cooked chicken in a baking dish, spoon marinara sauce over each piece and top with mozzarella slices.
Bake in preheated oven for 10 minutes or until cheese is melted and bubbly.
Toast sub rolls lightly, then layer with chicken parmesan and sprinkle with fresh basil before serving.
Notes
For extra flavor, add a pinch of crushed red pepper to the marinara sauce before baking.
