Instructions
Preparation Steps
In a bowl, combine the corn, diced tofu, flour, baking powder, salt, chopped green onions, and bell pepper.
Mix until evenly combined; the mixture should be moist but hold together.
Preheat your air fryer to 375°F (190°C).
Using a spoon, drop batter spoonfuls into the air fryer basket, ensuring they are spaced apart.
Lightly brush or spray the fritters with olive oil.
Cook for 10 minutes, then flip and cook for another 10 minutes until golden brown.
Remove from the air fryer and allow to cool slightly before serving.
Notes
These fritters are delicious served with a spicy dipping sauce or topped with avocado.
