Instructions
Preparation Steps
Heat olive oil in a large pan over medium heat. Add the chopped onion and sauté until translucent.
Stir in minced garlic and grated ginger; cook for about 1 minute until fragrant.
Add curry powder and mix well to coat the onions.
Incorporate the aubergine pieces, and cook for 5 minutes, stirring occasionally.
Pour in the diced tomatoes and coconut milk; stir until combined.
Reduce heat to low and let simmer for 20 minutes or until the aubergine is tender.
Remove from heat, mix in lime juice, and adjust seasoning if needed.
Serve hot, garnished with chopped cilantro.
Notes
Serve with rice or naan for a complete meal. For added heat, include sliced chilies.
