Instructions
Preparation Steps
Heat vegetable oil in a large pan over medium heat.
Add chopped onions and sauté until golden brown, about 5 minutes.
Stir in Balti curry paste and cook for 2 minutes to release the flavors.
Add chicken thighs and cook until lightly browned on all sides, about 5-7 minutes.
Pour in diced tomatoes and water, then season with salt. Bring to a simmer.
Cover and let cook for 20 minutes or until chicken is tender and cooked through.
Serve hot with steamed rice or naan bread.
Notes
For added richness, stir in a tablespoon of cream or yogurt at the end of cooking.
