Heat olive oil in a large skillet over medium heat. Add chicken breasts and cook for 6-7 minutes per side until cooked through and golden brown. Remove from skillet and set aside.
Add orzo pasta and chicken broth. Bring to a boil, then reduce heat to low and cover. Simmer for 12-15 minutes until orzo is tender and liquid is absorbed.
Slice the cooked chicken breasts into strips and stir into the orzo mixture. Add Parmesan cheese, chopped parsley, salt, and pepper. Stir until cheese is melted and everything is combined.
Serve immediately with additional parsley or Parmesan if desired.
Notes
For extra flavor, add a squeeze of lemon juice before serving or sprinkle with red pepper flakes for heat.
