Instructions
Preparation Steps
In a large bowl, combine ground beef, uncooked rice, beaten egg, salt, and black pepper. Mix until well combined.
Form the mixture into small meatballs about 1 inch in diameter.
In a large pot, bring beef broth to a boil and add chopped tomatoes, carrots, onions, and garlic.
Carefully add the meatballs to the boiling broth. Reduce heat and simmer for 30 minutes or until meatballs are cooked through and rice is tender.
Serve hot, garnished with chopped cilantro if desired.
Notes
Albondigas can be served with warm tortillas or crusty bread for a filling meal.
