Instructions
Preparation Steps
Soak the rice vermicelli noodles in hot water for 10 minutes until soft, then drain and set aside.
Fill a shallow dish with warm water. Dip one rice paper wrapper in the water for about 10 seconds until soft.
Place the wrapper on a clean surface, and add a small amount of noodles, mint, shrimp, lettuce, and bell pepper in the center.
Fold the sides of the wrapper over the filling, then roll tightly to create a roll.
Repeat with remaining wrappers and filling.
Notes
Serve with peanut dipping sauce for an extra flavor boost.
