Preparation Steps
Heat olive oil in a large skillet over medium heat.
Add the chopped onions and bell peppers; sauté until soft, about 5 minutes.
Stir in the ground turkey, cooking until browned and fully cooked, about 7-8 minutes.
Add garlic powder, cumin, black beans, corn, and enchilada sauce, stirring well.
Simmer for 5-10 minutes until heated through.
Sprinkle shredded cheese on top; cover until melted.
