Instructions
Preparation Steps
Rinse the rice under cold water until the water runs clear.
In a pot, combine the rinsed rice, coconut milk, water, and salt.
Add the cooked kidney beans, thyme, garlic, and scallions to the pot.
Bring to a boil over medium-high heat, then reduce to low.
Cover and simmer for about 30 minutes or until rice is tender.
Notes
For extra flavor, serve with additional scallions on top or a squeeze of lime.
