Instructions
Preparation Steps
In a large pot, heat olive oil over medium heat.
Add chopped onion and cook until translucent, about 5 minutes.
Stir in the minced garlic and cook for another minute.
Add diced carrots and cook for 5 more minutes, stirring occasionally.
Add lentils, vegetable broth, cumin, paprika, and black pepper.
Bring to a boil, then reduce heat and let simmer for about 25 minutes until lentils are tender.
Notes
Serve with a dollop of yogurt on top for added creaminess.
