Preparation Steps
Soak glass noodles in hot water for 20 minutes until softened, then drain.
Heat sesame oil in a large pot over medium heat, add garlic and ginger, sauté for 1 minute.
Add sliced mushrooms and cook until they soften, about 5 minutes.
Pour in vegetable broth and soy sauce, bringing mixture to a boil.
Stir in the soaked glass noodles and spinach, cooking for another 5 minutes until heated through.
