Instructions
Preparation Steps
In a large pot, heat olive oil over medium heat. Sauté the onion, carrots, and celery for about 5 minutes.
Add the garlic and cook for another minute until fragrant.
Stir in the canned tomatoes, kidney beans, and cannellini beans, mixing well.
Pour in the vegetable broth and bring the mixture to a boil.
Add the pasta, Italian seasoning, and red pepper flakes. Reduce heat and simmer for about 15 minutes, or until pasta is tender.
Remove from heat and stir in chopped parsley before serving.
Notes
For added flavor, sprinkle some grated Parmesan cheese before serving. This soup keeps well in the fridge for a few days!
