Instructions
Preparation Steps
In a pot, heat olive oil over medium heat. Sauté chopped onion until translucent.
Add minced garlic, and sauté for another minute until fragrant.
Stir in wild rice, vegetable broth, pumpkin puree, ground cinnamon, salt, and pepper.
Bring the mixture to a boil, then reduce to a simmer. Cover and cook for 30 minutes.
After cooking, let the dish rest for 5 minutes before serving.
Notes
For added flavor, consider garnishing with toasted pumpkin seeds or a sprinkle of fresh parsley.
