Preparation Steps
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream together the softened butter and sugar until light and fluffy.
Beat in the egg and vanilla extract until well combined.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Roll dough into 1-inch balls and place them 2 inches apart on the baking sheet.
Flatten each ball slightly with the bottom of a glass or your hand.
Bake for 10 minutes or until edges are lightly golden. Remove and cool on a wire rack.
Notes
Store cookies in an airtight container for up to one week. Optionally, add sprinkles for decoration before baking.
