Instructions
Preparation Steps
In a large pot, heat the olive oil over medium heat. Add the beef and brown on all sides.
Add the garlic, salt, and pepper. Stir for about 1 minute.
Pour in the beef broth and bring to a boil. Add the mixed vegetables and potatoes.
Reduce heat to low and cover. Simmer for 60 minutes, stirring occasionally.
