Instructions
Preparation Steps
Cook the rice noodles according to package instructions. Drain and rinse under cold water.
Combine shredded carrots, cucumber, cilantro, and bell peppers in a large bowl.
In a separate bowl, mix peanut butter, soy sauce, and lime juice until smooth.
Toss the cooled noodles with the vegetable mixture and coat with the dressing.
