Instructions
Preparation Steps
Preheat the oven to 425°F (220°C).
Wash and halve the baby red potatoes, then place them in a large bowl.
Add olive oil, minced garlic, dried oregano, salt, and black pepper to the potatoes. Toss to coat evenly.
Spread the potatoes out in a single layer on a baking sheet.
Roast in the preheated oven for 40 minutes, stirring halfway through, until golden and crisp.
Remove from the oven and immediately sprinkle grated parmesan over the hot potatoes. Toss gently to combine.
Serve warm as a delicious side dish.
Notes
For extra flavor, add a sprinkle of fresh parsley before serving.
